Therestaurant is located at the very top of Rovinj white hill, just under Saint Euphemia basilica. Monte doesn’t stick to radition; they’re into contemporary trends, using innovative techniques to present original flavors. “We don’t serve
traditional Istrian pasta pljukanci or cabage and bean stews. This is a different kind of cuisine, where we rely on local food in the season. I love cooking with fresh food from the sea, served raw or processed at low temperatures. We often change the menu, a la carte four times a year, and the tasting prix-fixe even more often.
