Fresh, raw, high quality fish, with “from the sea to the table” motto serves as a simple philosophy of this nice and cosy restaurant (only six tables and 22 seating places) Damir& Ornella, in business from late 90ies, in the very heart of old Novigrad. Damir and Ornella are the Beletić family. They are their own chefs, and their daughter Matea is the sommelier.
“We have been described as the Istrian sashimi. I like that definition. We base everything on raw fish. We use the same techniques like in Japan, but we use Istrian spices and flavours”, says Damir Beletić. The fish is filled and prepared in front of the guests. A six course menu is based on daily offer of fish and the season. The Damir& Ornella restaurant is well known outside of Croatian borders, and their guests are mainly foreign tourists.
