In the mood for some healthy veggies today? Here is a recipe for warm pumpkin salad, a delicacy which can be served at any time of the year. Of course, if the ingredients are available. In addition to great taste, it also comes with a lenghty list of vitamins, which will boost your immunity and sense of wellbeing. The meal is both easy and quick to prepare.

What you will need:

1 middle-sized pumpkin

2 larger zucchinis

½ cup of pumpkin seeds

½ cup of sunflower seeds

1 lemon

Olive oil

60 g walnuts

What you will do:

Remove the seeds from the pumpkin and peel its outer layer. Cut it on the cube-like shapes of the desired size. The zucchini doesn’t need to be peeled, just chop them on the larger pieces.

Take the roasting pan and insert an oiled paper on its bottom. Put the pumpkin and zucchini chops atop the paper and put in the oven pre-heated at 180°C.

Roast the food for 15 minutes. At that time, the veggies will probably turn black a bit, and significantly soften. While waiting for this to happen, sprinkle the pumpkin and sunflower seeds with water, add a few grains of salt and heat them on the pan. Don’t add oil.

Once the veggies are finished, put some olive oil and squeeze the lemon over the meal. Add seeds and walnuts, finishing the preparation.
