Looking more like a bowl of herbalist magic, the mystically-green watercress soup isn’t just a nice sight on the table. It is also a very healthy dish which won’t do much damage to your daily calorie values, and will satisfy your appetite with rich flavor and pleasant aroma.
What you will need:
2 spoons of olive oil
1 small onion, minced
2 cloves of garlic, crashed
2 potatoes, pilled and chopped on cubes
150 g beans
1 l of veggie broth
200 g watercress plant
Several slices of thinly cut bacon
What you will do:
Heat olive oil in a large cooking pot. Insert minced onion and garlic, and once they soften and become glass-like, add potato cubes and beans. After a while, pour the veggie broth and thermally process until the potato softens. This will usually take about 15 minutes. Finally, add watercress plants. Remove from flame and additionally blender with a kitchen gadget of your choice.
On a separate pan, fry bacon bits and leave them on a peppered kitchen paper. Insert them into the soup, and serve hot.
