Barley is an ingredient which goes well with variety of tastes. In case you like veggies, especially the tasty mushrooms, the following recipe might me a good choice for your today’s meal. Peas & Mushrooms Barley is an easy to make dish, yet its lovely colors never fail to leave an impression. It might just be the thing you need for your next lunch in the outdoor garden. Here is how you will prepare it.

What you will need

1 bowl of cooked barley

2 carrots

1 cup of peas

350 g mushrooms (we suggest champignons)

1 onion

2 cloves of garlic

Thyme

Parsley Leaf

1,5 dcl white wine

Olive Oil

Grated Parmesan Cheese

Salt

Pepper

Peas & Mushrooms Barley Preparation

Heat some olive oil and thermally process the onion until it receives a glass-like color. Once this is done, add minced carrot and peas. Pour some water or broth of your choice to keep the veggies from attaching to the bottom of the pan.

After a few minutes, insert the barley (it should be pre-cooked), as well as mushrooms. As already noted, champignons are suggested option, but you are free to experiment on your own. Add minced garlic and white wine, together with some thyme and parsley leaf.

Wait until the mushrooms release all of their juices, and stir gently for flavors to combine. Salt and pepper should be added at this point as well. The meal should be creamy, so watch carefully that vegetables don’t overcook. Once the dish is ready, cover it with a few pours olive oil and some grated parmesan cheese.
