Cabernet Sauvignon, Merlot, Syrah Jakobovic 2009 Commentary
One can learn a lot from observing a master-piece in making. The warm summer of 2009 filled the grapes with sugar. The end of September triggered people to harvest, usually in early morning hours when the temperature didn’t surpass 10ºC. On the way to Zagreb vinery in Sestine region, the grapes were slightly frozen, only to receive in self-initiated fermentation on regular room temperature. Selected yeasts were added later, on higher heat. The young wine, called most by Croats, was aired for two times and returned to storages of stainless steel. The entire process lasted for more than a month, the entire 40 days. The barrels of Slavonian oak, produced by France-educated experts Mija Coskovic and Milivoj Golub, also gave their share to the taste. Yet, the powerful wine of this mixture didn’t fall to Slavonian wood. It was barrique which took care of the elegance. The final result, after two years of attempting, is in front of us.
